Cooking Classes

Spend an evening learning new cooking techniques from around the world. Each course includes all gourmet ingredients and a communal meal of the culinary delights you and your fellow students create in class. These very hands-on workshops are always interactive, fun and delicious.

Some courses require additional textbooks and/or materials. Please visit your campus store in-person or online: Peterborough Campus Store or Lindsay Campus Store.

Cooking: Canadian Maple Cuisine (CULN118)

Oh Canada, you most delicious land. Just in time for the new maple season, we explore how this nectar of deliciousness can add sophistication to appetizers, main courses and deserts. You will be making these dishes from scratch, with the guidance of a seasoned chef, and feasting on them at the end of the evening. Along the way you might pick up a few new cooking techniques, and you'll receive all the recipes from tonight's menu.

Cooking: The Flavours of Italy-Milan (CULN119)

Known for high fashion and design, Milan is also home to sophisticated Italian dining, and that is what you will create in this class. Learn to prepare antipasti (appetizers), main courses and desserts that reflect elevated Italian cuisine. Mouth-watering flavours and delicious aromas will be at the forefront, as you test out techniques and exquisite recipes with our chef as your culinary mentor. Say buon appetito as we conclude the evening with a communal dinner of our creations.

Cooking: The Flavours of Italy-Antipasti of Tuscany (CULN120)

The ancient cities and rolling hills of Tuscany are not only known as inspiration for artists and writers, they're also home to flavourful Italian country cuisine. Just in time for spring and summer entertaining, this course focuses on easy, yet tasty Italian appetizer platters. You'll learn to make a sophisticated bruschetta and Italian summer gazpacho (cold soup). We'll also cook up a fool-proof rustic focaccia and explore the main varieties of toppings, to which this Italian flatbread lends itself. Get ready to create iconic dishes from a region known for its beautiful wines, warm summer evenings and laid-back lifestyle.

Cooking: The Flavours of Italy-Napoli/Naples (CULN121)

This historically significant port town reflects the influence of many merchants. Explore the bountiful offerings of the Mediterranean Sea as we cook up a variety of seafood and fish dishes. Explore techniques, such as poaching and searing fish, and creating seafood stews, all with a Napoli twist that reflects the town's heritage. Please note that this course may include mussels and clams and is not recommended for anyone with an allergy to shellfish.

Cooking: The Flavours of Italy-Sicilian Street Food (CULN122)

Sicily is the largest of the Mediterranean islands with a rich history of architecture and food. An air of simplicity and comfort mixed with enticing aromas and smells is unmistakeable as we explore the cuisine of street vendors of Palermo and Catania. Join us as we recreate their most enticing items, from filling piadinas (filled flatbread sandwiches) to tasty skewers, to so many more bites and nibbles. This fast and easy street food cooking course will have you slicing, dicing and prepping in our commercial kitchen, before we sit down to enjoy it all with a communal meal.

Cooking: Parent Child Pasta Day (CULN123)

Kids love pasta, and they love learning how to make it. The fun that can be had with our wee ones in the kitchen can't be understated. Let's show our little helpers how to make pasta as well as nice and easy yet delicious sauces. They'll have a blast pulling long strings of pasta through our pasta machine, and taking on the responsibility of creating a full meal. Learning to cook for little ones, isn't just about techniques. It's about creating independence, a sense of pride and a bonding experience with a parent, grandparent or guardian.

Cooking: BBQ-The Meat, the Rubs and the Sauces (CULN124)

The ultimate hosting meal is BBQ. The sizzle, the smoke, the basting and brushing of the sauce and marinade all add up to one of summer's most iconic pastimes. You will learn to create a variety of tantalizing rubs and flavourful BBQ sauces. Along the way you'll learn insider tips on BBQ techniques, including pulled pork, how to create smoke packets and more. Although meat is the main attraction of this evening, you'll also learn to create easy sweet potato ribbons, a sophisticated step up from the usual fries.
