Cooking Classes

Spend an evening learning new cooking techniques from around the world. Each course includes all gourmet ingredients and a communal meal of the culinary delights you and your fellow students create in class. These very hands-on workshops are always interactive, fun and delicious.

Some courses require additional textbooks and/or materials. Please visit your campus store in-person or online: Peterborough Campus Store or Lindsay Campus Store.

Cooking:Let's Go for Thai (CULN108)

The aromatic flavours of Thai food can make your mouth water. In this hands-on course, you'll learn where to buy local ingredients and how to prepare intriguing dishes with a tropical flair. From Pad Thai to curries and rice, you'll be amazed at how easy it is to bring a little exotic flavour into your kitchen, and you'll enjoy the fruits of your labour at the end of the class. All food costs and a recipe booklet of Thai dishes are included in the cost of the course.

Cooking: Sweet, Sweet Harvest Treats (CULN110)

As summer winds down, the abundance of the harvest is in full swing. Evoking the spices and scents of grandma's kitchen, we'll spend an evening turning Ontario's fall bounty into sweet treats. You'll learn hands-on how to make delicious classic deserts, like tarts, pies and other goodies, just like grandma used to make, but with a modern twist. The cost of ingredients and a recipe booklet is included in the cost. This is a wonderful class to enjoy with your friends or partner.

Cooking: An Introduction to Pasta (CULN111)

Pasta is a staple in almost every household. But if you're stuck cooking the same old recipe, it's time to fall in love again with the simplicity, flavours and variety a pasta dinner can offer. In this class we create three different kinds of pasta: plain, stuffed and baked and the sauces to go with each. In groups you will make pasta, filling, sauce, and sides from scratch. You?ll be astounded at how simple it is to elevate the flavours of a pasta dish. Impress your family and guests by bringing a little taste of Italy into your kitchen. Course fees include all gourmet ingredients and the delicious meal cooked up in this class.

Cooking: Wild Game (CULN113)

Whether you are a hunter or a foody, you'll learn how to bring out the best flavours in wild game in this interactive and hands-on course. Your chef and instructor hails from Switzerland, where creating wild game dishes is a culinary autumn tradition. You?ll not only learn how to elevate game dishes, you'll also discover the sauces, vegetables and starches that will make this meal a fine dining experience to impress your guests. And you'll get to taste your creations at the end of the class. Course fees include all gourmet ingredients.

Cooking: Holiday Baking Express (CULN114)

Tis the Season for sugar and spice and everything nice. If you're wondering, what sweet treats to make for the holidays, allow me to bake some suggestions with you. Join me, your Swiss chef and cookie-connoisseur instructor, as we dig out some classics and discover some new recipes. This fun and festive baking class for the Holidays is a great way to spend time with your friend or child, so sign up together. Course fees include all gourmet ingredients and the treats you bake in class.

Cooking: Breads and Pizza (CULN115)

The warm aromas and smells of fresh bread and pizza are hard to beat. Let's create these together, and you'll discover just how easy it is. You'll be making Swiss bread and warm buns from scratch in this hands-on course in our commercial kitchen. You'll also learn to make fail-safe pizza dough, a family favourite meal that lends itself to so many possibilities and favourite toppings. Join our chef for an evening of Pizza baking and Bread making and bring home some delicious breads that will be easy to recreate with your family.

Cooking: Fine Dining Dinner for Two (CULN116)

Is there someone you'd like to impress with your culinary prowess? Then join us in learning how to create a 3-course fine dining experience for two. No experience is necessary, as you learn techniques and recipes for an appetizer, main course and desserts that will make you look like a pro in the kitchen and you'll get to feast on your creations at the end of the night. This course is a wonderful way to spend an evening with a friend or partner or learn to prepare a 3-course meal just in time for Valentine's.

Cooking: Chasing Chocolate (CULN117)

The ancient Aztecs believed that the cacao bean was a gift from their god of wisdom Quetzacoatl, and wise they were indeed. Today Chocolate is widely considered to be one of the finest treats. In this most satisfying session we indulge in classic desserts and their intricate yet simple preparation. You'll learn to create mousse au chocolate, flourless chocolate cake and chocolate truffles, which lend themselves to so many variations. Join us for the ultimate in culinary decadence.

Cooking: Canadian Maple Cuisine (CULN118)

Oh Canada, you most delicious land. Just in time for the new maple season, we explore how this nectar of deliciousness can add sophistication to appetizers, main courses and deserts. You will be making these dishes from scratch, with the guidance of a seasoned chef, and feasting on them at the end of the evening. Along the way you might pick up a few new cooking techniques, and you'll receive all the recipes from tonight's menu.

Cooking: BBQ-The Meat, the Rubs and the Sauces (CULN124)

The ultimate hosting meal is BBQ. The sizzle, the smoke, the basting and brushing of the sauce and marinade all add up to one of summer's most iconic pastimes. You will learn to create a variety of tantalizing rubs and flavourful BBQ sauces. Along the way you'll learn insider tips on BBQ techniques, including pulled pork, how to create smoke packets and more. Although meat is the main attraction of this evening, you'll also learn to create easy sweet potato ribbons, a sophisticated step up from the usual fries.

Cooking: Fun and Festive Thanksgiving (CULN127)

If you've never prepared a thanksgiving dinner or if you always reach for the same recipes, here's your chance to elevate this annual feast and impress your guest. In this hands-on class you'll be guided step-by-step on roasting a turkey, using rubs to flavour it and creating sides that will complement the meat and take advantage of the seasonal ingredients. Cooking: Fall and Winter Comfort Soups (CULN128)

On a cold day nothing can warm you up like a hearty, tasty soup. Join us at Fleming's commercial kitchen to learn hands-on how to create 3 very different soups that are steeped in flavour and celebrate the season. These are sure to become staples in your home. Cooking: Knife Skills-Wield It Like a Pro (CULN129)

This essential course will give you skills you can use every time you prepare a meal. Learn the elementary knife skills that will keep you safe and give you the foundation to build up speed and precision. You will practice how to hold your knife properly, how to choose what tool to use, and how to make various cuts with repeatable accuracy and consistency. You will also learn how to sharpen your own knives.

Cooking: Tacos de la Tierra-Beef (CULN131)

Put a little spice in your life with this cooking class on beef tacos (carne). Learn hands-on in our commercial kitchen how to prepare variations of these along with appropriate spices, toppings and fillings. Bring container to take home the dishes you create.

Join the new food trend of creating fish tacos. Spices and toppings are vastly different for these tacos than traditional meat tacos. Learn hands-on how to prepare the fish, spices, fillings and toppings to create tacos that are on the healthier side. Bring containers to take home leftovers.

The go-to for most taco lovers is pollo: chicken and poultry. Get the inside scoop on how to infuse this tender and juicy meat with flavor to make it stand out. In our commercial kitchen we'll work together to prepare the meat as well as all the toppings, sides and spices to fill the tacos. Bring containers to take home any leftovers.

Cooking: Switzerland-The chef's intro to his home cooking (CULN134)

This not-to-be-missed class will introduce you to the rich and flavourful Swiss cuisine, which is rooted in its abundance of wild game, alpine geography, and its regional influences from Germany, France and Italy. You will learn hands-on how easy it is to prepare traditional Swiss dishes like a native, with recipes that are authentic and time-tested. Bring containers to take home any leftovers.

There?s nothing quite like the sent of the spice markets in Morocco and Algiers. This class will introduce you to flavours you may never have experienced before. Working in our commercial kitchen, you will learn hands-on how to prepare local dishes with flavours that will astound. Bring containers to take home any leftovers.
